Pancakes are THE classic breakfast meal.  And these sugar-free, fluffy pancakes are perfect for lazy weekends.  Simple and easy to make, you are going to love these for your mealtimes.

How to Make Pancakes

Making homemade pancakes has never been easier!  In a large bowl, mix the flour, baking powder, cinnamon, and salt together.  In a separate medium bowl, mix the wet ingredients together:  milk, egg, vanilla, and melted butter.  Pour the wet ingredients into the dry ingredients and combine.  Heat your frying pan on a low-medium heat.  Pour the desired pancake size onto the frying pan.  I find using a ladle is the easiest way to get the desired size that you want.  Once the edges start to look dry and bubbles are rising and popping in the batter, flip the pancakes over and continue to fry for about another minute.  It normally takes about 1-2 minutes on both sides to cook them.  This recipe makes 12 fluffy pancakes.

What to Serve with Pancakes

As a Canadian woman myself the answer is always maple syrup; however, there are lots of different toppings that you can put onto your pancakes or serve with them.  For a sweet option, you can top them with fresh fruit, powdered sugar, or Nutella.  For a more savoury option, serve with sausages, bacon, or some delicious poached eggs.

How to Reheat Pancakes

There are a few different ways to reheat your pancakes at home.  I love reheating my pancakes the next day and enjoying them again without having to go through the whole process of making them.  And with these instructions, you will be able to reheat them in no time at all!

  1. How to Reheat Your Pancakes with the Toaster:  pop those leftovers directly into your toaster and let it reheat them for you.  It is important to note that if you put any sort of fruit into your pancakes, the fruit could stick to your toaster while reheating.  But if you only made plain pancakes then this is the route to go!  Easy right?!
  2. How to Reheat Your Pancakes in the Oven:  line your baking sheet with parchment paper and lay your pancakes out in a single layer and cover in aluminum foil.  Heat the stove to 350℉/175℃/Gas Mark 4 and bake them for 5-8 minutes.  They will not be as crispy when you remove them from the oven, but it is an easy way to reheat a large batch at one time.
  3. How to Reheat Your Pancakes in a Frying Pan:  to reheat them in the frying pan, heat your frying pan on a low heat and coat it with either non-stick spray or butter.  Place the pancake onto the frying pan and heat for 10 seconds on one side then flip to the other side for another 10 seconds.  Continue to do this method until they are heated throughout.  Make sure to keep the frying pan on a low heat during the whole reheating process as anything higher can cause them to burn rather quickly.
  4. How to Reheat Your Pancakes in the Microwave:  place them into the microwave on a microwave safe dish.  If you are only reheating one, then microwave it for 10-20 seconds, and if you have a stack of them, microwave them for 1 minute.  This method is a bit controversial as the pancakes can become soggy while microwaving; however, it is the easiest method.

Ingredients

All-Purpose/Plain Flour:  the all-purpose flour is the basis of this breakfast meal.  It can easily be substituted for gluten-free flour without any texture differences or people being able to notice.

Milk:  milk provides the main liquid for this recipe.  You can also substitute goat’s milk for regular milk here.  You cannot even taste the difference if you use goat’s milk.  Believe me, I was skeptical at first here too.

Egg:  the egg is used to bind all of the ingredients together.

Butter:  butter adds some richness and flavour.  Butter can also be used to to keep them from sticking to the pan.  By using butter to prevent the pancakes from sticking to the frying pan, you can really add extra flavour to this recipe.

Vanilla Extract:  vanilla extract enhances flavour.

Cinnamon:  cinnamon adds a subtle spice taste.

Salt:  salt enhances the flavour of the other ingredients.

Ingredients
  

  • 2 c. all-purpose/plain flour

  • 2 c. milk

Instructions
 

  • In a large bowl, whisk the flour, baking powder, cinnamon, and salt together.
  • In a medium bowl, whisk together the milk, egg, vanilla extract, and melted butter.
  • Pour the wet ingredients into the dry ingredients and stir them together until they are well incorporated.
  • Place a frying pan on low to medium heat. Pour the desired size of your pancakes onto the frying pan. Let the sides of the pancakes start to darken and bubbles form and pop in the middle of the batter. Once the sides are slightly hardened and are turning golden brown, flip them over and continue to fry on the other side for about a minute. They normally take 1-2 minutes of frying per side.
  • Remove from the heat and serve with maple syrup or nutella and fresh berries! Makes 12 pancakes.
