How to Make a Beef Noodle Stir Fry

Start by making the stir-fry sauce.  In a small mixing bowl, whisk together the soy sauce, brown sugar, rice wine vinegar, ginger powder, cornstarch, and a pinch of chili flakes for heat. Set this flavourful sauce aside while you get the rest of the ingredients cooking.

Heat a drizzle of olive oil in a large skillet over medium-low heat.  Add the diced onion and cook for 2–3 minutes until it becomes soft and translucent.  Stir in the minced garlic and sauté just until fragrant, about 1 minute, making sure it doesn’t burn.

Next, add the ground beef to the skillet and cook until browned and fully done, seasoning with salt and pepper to taste. Once the beef is cooked, toss in the broccoli florets and cook for another 2–3 minutes until they begin to soften but still have a nice bite.

Add the stir-fry noodles along with the homemade sauce you prepared earlier.  Stir everything together well, cooking for about 5 minutes until the noodles are heated through and fully coated in the glossy stir-fry sauce.  Keep stirring frequently so the sauce thickens nicely and clings to every ingredient.

Remove from heat, allow it to cool slightly, and then enjoy your delicious homemade beef and noodle stir fry.  This noodle recipe is so quick, satisfying, and perfect for busy nights!

Storage

To store leftovers, allow the stir-fry to cool completely, then transfer it to an airtight container.  Store in the refrigerator for up to 4 days.
If you want to freeze the leftovers, place cooled portions in freezer-safe bags or containers and store them in the freezer for up to 2 months.  Thaw overnight in the fridge before reheating.
To reheat, place leftovers into a skillet over medium heat with a splash of water or beef broth to loosen the sauce.  You can also microwave in 30-second intervals, stirring in between until fully warmed through.

Ingredients

Low-Salt Soy Sauce: This is the savoury base of the stir-fry sauce, giving the dish that classic salty-umami flavour without being overwhelming.  Low-sodium keeps the meal balanced and healthier.

Brown Sugar: A touch of brown sugar adds the perfect sweetness to contrast the salty soy sauce and helps create a glossy, caramelized finish on the beef and noodles.

Rice Wine Vinegar: This mild vinegar brightens the sauce with a little tang and enhances the overall flavor, making each bite more vibrant and delicious.

Ginger Powder: Adds warmth and that signature Asian-inspired spicy-sweet flavor to the stir fry. You can use fresh ginger, too if you love extra zing!

Cornstarch: The key to a thick, silky sauce!  Cornstarch helps everything cling beautifully to the beef and noodles.

Chili Flakes: Totally optional, but amazing for heat lovers!  Just a pinch adds the perfect spicy kick.

White Onion: Cooked until soft and fragrant, the onion builds the first layer of flavour in this quick and easy dinner.

Minced Garlic: Garlic adds bold aroma and depth, infusing the whole dish with rich savoury goodness.

Lean Ground Beef: Protein-packed and flavourful, ground beef makes this stir-fry hearty and satisfying while cooking quickly, perfect for weeknights.

Broccoli Florets: A pop of vibrant green and a boost of nutrition!  Broccoli adds crunch and is the perfect veggie pairing with beef and noodles.

Ready-Made Stir-Fry Noodles: Convenient, tender noodles that soak up the sauce beautifully.  No boiling needed!  They turn this into a fast one-pan meal.
