Ingredients

Apple Filling

  • 2 tbsp. butter
  • 6 Granny Smith Braeburn, or Honeycrisp apples about 2 lbs.
  • 1/4 c. brown sugar
  • 1 tbsp. lemon juice
  • 1 tsp. vanilla extract
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/2 tsp. salt

Batter

  • 1/4 c. unsalted butter softened
  • 1/2 c. granulated sugar
  • 1 c. buttermilk
  • 2 c. all-purpose flour
  • 2 tsp. baking powder
  • 1/4 tsp. salt

Instructions

  • Preheat the oven to 350℉/175℃/Gas Mark 4.
  • Peel the apples and slice them and add them to a medium sized bowl. Add the brown sugar, lemon juice, vanilla extract, cinnamon, nutmeg, and salt to the peeled apples and stir together.
  • Melt the 2 tbsp. of butter in a large pan on medium heat. Add the apples and stir so that the apples are completely coated in the butter. Cook for about 5 minutes or until the apples are softened. Remove from the stove and pour the apples into a greased 9x13 pan. Set aside.
  • In a large bowl, cream the softened butter with the granulated sugar. Once the butter is creamed, add the all-purpose flour, baking powder, and salt and continue to beat on medium speed until fully mixed together. Lastly, add the buttermilk and mix well.
  • Pour the batter over top of the baking apples and place the apple cobbler into the oven and bake for 45 minutes or until a knife inserted comes out clean.
  • Remove from the oven, let cool, and serve with ice cream or whipped cream and enjoy!
