Apple Filling
- 2 tbsp. butter
- 6 Granny Smith Braeburn, or Honeycrisp apples about 2 lbs.
- 1/4 c. brown sugar
- 1 tbsp. lemon juice
- 1 tsp. vanilla extract
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/2 tsp. salt
Batter
- 1/4 c. unsalted butter softened
- 1/2 c. granulated sugar
- 1 c. buttermilk
- 2 c. all-purpose flour
- 2 tsp. baking powder
- 1/4 tsp. salt
Preheat the oven to 350℉/175℃/Gas Mark 4.
Peel the apples and slice them and add them to a medium sized bowl. Add the brown sugar, lemon juice, vanilla extract, cinnamon, nutmeg, and salt to the peeled apples and stir together.
Melt the 2 tbsp. of butter in a large pan on medium heat. Add the apples and stir so that the apples are completely coated in the butter. Cook for about 5 minutes or until the apples are softened. Remove from the stove and pour the apples into a greased 9x13 pan. Set aside.
In a large bowl, cream the softened butter with the granulated sugar. Once the butter is creamed, add the all-purpose flour, baking powder, and salt and continue to beat on medium speed until fully mixed together. Lastly, add the buttermilk and mix well.
Pour the batter over top of the baking apples and place the apple cobbler into the oven and bake for 45 minutes or until a knife inserted comes out clean.
Remove from the oven, let cool, and serve with ice cream or whipped cream and enjoy!
