Blueberry Cookies Recipe

Ingredients
  

  • 1/2 c. unsalted butter softened
  • 1/2 c. brown sugar
  • 1/4 c. granulated sugar
  • 1 tsp. vanilla extract
  • 1 egg
  • 1 c. all-purpose flour
  • 1/2 c. oats
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 c. fresh blueberries

Instructions
 

  • Preheat the oven to 350℉/176℃/Gas Mark 4.
  • In a large bowl, cream the unsalted butter, brown sugar, and granulated sugar together.
  • Add the egg and vanilla extract and beat with a hand mixer until mixed together. About 1-2 minutes, scraping down the sides of the bowl as needed.
  • Add the all-purpose flour, oats, baking soda, and salt to wet ingredients, and on low speed beat until the batter is nice and thick. About 2-3 minutes.
  • Stir in the fresh blueberries.
  • Bake for 14-15 minutes or until the edges are golden.
  • Remove from the oven and let cool in the pan before transferring to a wire rack to continue to let cool. Enjoy!
