Blueberry Galette Recipe

Ingredients
  

  • 1 puff pastry homemade or store-bought

Galette Filling

  • 4 c. blueberries fresh or frozen (do not thaw)
  • 1/4 c. granulated sugar
  • 2 tbsp. cornstarch
  • 1 tbsp. lemon juice
  • 1 tbsp. lemon zest
  • Pinch of salt

Egg Wash

  • 1 egg
  • 1 tbsp. whole milk

Instructions
 

  • Preheat the oven to 425℉/220℃/Gas Mark 7.
  • In a large bowl mix together the fresh, or frozen, blueberries cornstarch, granulated sugar, lemon zest, lemon juice, and a pinch of salt. Mix together well.
  • Make the egg wash by whisking the egg and whole milk together in a separate small bowl.
  • Roll out the either store-bought or homemade puff pastry onto a baking parchment-lined baking sheet.
  • Pour the blueberry galette filling on top of the puff pastry making sure to keep the filling away from the edges about 1-2 inches.
  • Fold over the edges of the puff pastry and brush the edges with the egg wash. Sprinkle with coarse sugar if desired.
  • Bake for 30 minutes or until the edges of the pastry are a golden brown.
  • Remove from the oven, let cool for 10 minutes, and serve topped with ice cream or whipped cream. Enjoy!
