Blueberry Galette Recipe

- 1 puff pastry homemade or store-bought
Galette Filling
- 4 c. blueberries fresh or frozen (do not thaw)
- 1/4 c. granulated sugar
- 2 tbsp. cornstarch
- 1 tbsp. lemon juice
- 1 tbsp. lemon zest
- Pinch of salt
Preheat the oven to 425℉/220℃/Gas Mark 7.
In a large bowl mix together the fresh, or frozen, blueberries cornstarch, granulated sugar, lemon zest, lemon juice, and a pinch of salt. Mix together well.
Make the egg wash by whisking the egg and whole milk together in a separate small bowl.
Roll out the either store-bought or homemade puff pastry onto a baking parchment-lined baking sheet.
Pour the blueberry galette filling on top of the puff pastry making sure to keep the filling away from the edges about 1-2 inches.
Fold over the edges of the puff pastry and brush the edges with the egg wash. Sprinkle with coarse sugar if desired.
Bake for 30 minutes or until the edges of the pastry are a golden brown.
Remove from the oven, let cool for 10 minutes, and serve topped with ice cream or whipped cream. Enjoy!
