Butternut Squash Mash Recipe

This butternut squash mash recipe is easy to make and is made by baking a fresh butternut squash then adding savoury herbs for extra flavor.  This is a delicious side dish that will go well with your recipes!

Ingredients
  

  • 1 Butternut Squash
  • 1 tsp. Olive oil
  • Salt to taste
  • Pepper to taste
  • 2 tbsp. brown sugar
  • 2 tbsp. butter
  • 1/8 c. double cream

Instructions
 

  • Preheat the oven to 400℉/200℃/Gas Mark 6.
  • Take the butternut squash and cut it in half lengthwise. Scoop out the seeds.
  • Place the sliced squash onto a baking tray lined with parchment paper.
  • Drizzle the olive oil onto the flesh side of the squash. Season with salt and pepper.
  • Bake for 1 hour or until the squash flesh can be easily scooped out.
  • Remove from the oven then scoop out the flesh into a medium bowl. Mix in the brown sugar, butter, and double cream.
  • Enjoy and serve!
