Cauliflower Soup Recipe

Ingredients
  

  • 1/2 yellow onion diced
  • 2 tbsp. butter
  • 1 tsp. salt
  • 2 tbsp. all-purpose flour
  • 2 c. chicken broth
  • 3 c. frozen cauliflower florets thawed
  • 2 c. whole milk
  • 1 1/2 c. cheddar cheese
  • 1/4 c. green onion diced

Instructions
 

  • In a saucepan, melt the butter and add the yellow onion. Fry for about 7 minutes until the onion is translucent.
  • Add the salt and all-purpose flour to the onion. Once the onions are coated, add the chicken broth and bring to a boil until the broth has thickened. Once the soup has boiled, it should thicken in about 2 minutes.
  • Once the broth has thickened, add the cauliflower florest, whole milk, and cheddar cheese. Bring to a boil. Once the soup has reached a boil and the cheese is melted, add the green onion and remove from the heat.
  • Serve warm with a slice of bread.
