- 1/2 yellow onion diced
- 2 tbsp. butter
- 1 tsp. salt
- 2 tbsp. all-purpose flour
- 2 c. chicken broth
- 3 c. frozen cauliflower florets thawed
- 2 c. whole milk
- 1 1/2 c. cheddar cheese
- 1/4 c. green onion diced
In a saucepan, melt the butter and add the yellow onion. Fry for about 7 minutes until the onion is translucent.
Add the salt and all-purpose flour to the onion. Once the onions are coated, add the chicken broth and bring to a boil until the broth has thickened. Once the soup has boiled, it should thicken in about 2 minutes.
Once the broth has thickened, add the cauliflower florest, whole milk, and cheddar cheese. Bring to a boil. Once the soup has reached a boil and the cheese is melted, add the green onion and remove from the heat.
Serve warm with a slice of bread.
