Egg Salad Sandwiches

These egg salad sandwiches are my go-to summertime sandwiches.  Super easy to make and packed full of flavour.  They are perfect for picnics or day trip meals!  Summer just isn’t the same without making these sandwiches!

Ingredients
  

  • 12 medium eggs boiled
  • 1 medium onion finely chopped
  • 1 1/2 c. mayonnaise or miracle whip
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1 tsp. paprika

Instructions
 

  • Boil your dozen eggs for 10 minutes. Remove from the water and let cool. Once cooled, mash the eggs with either a fork or a large, holed masher.
  • Add your finely chopped onion and spices. Mix together.
  • Add your mayonnaise or miracle whip and stir until all of the egg is coated.
  • Serve on your favourite bread!
