Cuisine Asian
- 4 eggs egg yolks & whites separated
- 4 c. white or basmati rice pre-cooked
- 1/4 white onion diced
- 1/2 red bell pepper diced
- 1 c. frozen vegetables corn, peas, & carrots
- 2 green onions diced
- 2 tbsp. low salt soy sauce
- Salt and pepper to taste
Separate the egg yolks from the egg whites. Place the yolks into a bowl with the cooked rice and mix together well until all of the rice is coated well. Place the egg whites into a separate bowl.
Pour some olive oil into the frying pan and add the diced white onion and let fry on medium-high heat until translucent, about 5 minutes. Add the diced red bell pepper and frozen vegetables and let cook until fully softened. Move to the side of the pan, and pour in the egg whites and mix until fully cooked.
Add the egg yolk-coated rice and fully mix everything in the pan together. The rice should no longer look wet when it is fully cooked. Add the green onions, soy sauce, and salt and pepper to taste. Remove from the heat when fully cooked and enjoy!
