Nacho Casserole

This nacho casserole is a layered, cheesy baked dinner made with seasoned beef, tortilla chips, cheese, and classic nacho toppings. A quick, easy, and crowd-pleasing family meal.

Ingredients
  

  • 1 lb. lean ground beef
  • 1 tsp. salt
  • 1 tsp. black pepper
  • 2 tsp. paprika
  • 2 tsp. chili flakes
  • 1/2 yellow onion diced
  • 4 garlic cloves minced
  • 1/2 orange pepper diced
  • 1 c. salsa medium or spicy
  • 8 oz. Tomato
  • 8 oz. canned Black beans rinsed
  • 4 oz. canned corn
  • 1 1/2 c. salsa spicy or regular
  • 2 Jalapenos sliced (optional for extra spice)
  • 2 c. blended cheddar cheese
  • 2 c. tortilla chips + extra for dipping if desired
  • Sour cream and guacamole for dipping optional
  • Spring onions diced, optional

Instructions
 

  • Sauté the onions in a frying pan for about 8 minutes. Add the minced garlic and fry for another minute or until fragrant. Add the lean ground beef and add the spices, salt, black pepper, paprika, and chili flakes. Continue to fry until fully cooked through.
  • Add the diced orange pepper, corn, salsa, tomato sauce, jalapenos, and black beans. Mix together well and heat through.
  • Preheat the oven to 400℉/200℃/Gas Mark 6.
  • In a 9x13 baking dish, place half of the tortilla chips, beef mixture, and a layer of cheese. Add a second layer and place into the oven. Bake for 20 minutes or until the beef mixture is bubbling.
  • Remove from the oven and top with diced spring onion and serve with extra tortilla chips, guacamole, or sour cream.
