Peanut Butter Cookies Recipe

- 1 c. smooth peanut butter
- 1/2 c. brown sugar
- 1/2 c. granulated sugar 1/4 c. for the cookies & 1/4 c. for dusting
- 1 egg room temperature
In a medium bowl, mix together the smooth peanut butter, brown sugar, 1/4 c. granulated sugar, and 1 egg.
Let chill in the fridge for 2 hours.
Preheat the oven to 350℉/180℃/Gas Mark 4.
Take a small bowl and pour the rest of the 1/4 c. granulated sugar into it. Remove the cookie dough from the fridge and roll peanut butter dough into balls, about 1 tbsp. in size. Roll the balls in the sugar to coat and place them onto a lined baking sheet.
Using a fork, press down on each cookie then press down again at 90 degrees.
Bake for 10 minutes. The cookies' edges will look a bit hardened but the centres will be soft.
Remove from the oven, let cool, and enjoy!
