Red Velvet Batter
- 1 c. all-purpose flour
- 1/4 c. cocoa powder
- 1 tsp. salt
- 1/2 c. butter unsalted
- 1 c. granulated sugar
- 2 tsp. vanilla extract
- 2 tsp. red food colouring
- 1 tsp. white vinegar
- 2 eggs
Cream Cheese Filling
- 8 oz. Cream cheese full-fat
- 1 tsp. vanilla extract
- 1 egg
- 1/4 c. granulated sugar
Cream Cheese Filling
In a medium bowl, beat the full-fat cream cheese, granulated sugar, egg, and vanilla extract together until smooth. Keep in the fridge until ready to use.
Red Velvet Brownie Batter
Preheat your oven to 350℉/176℃/Gas Mark 4.
In a medium bowl whisk the all-purpose flour, cocoa powder, and salt together. Set aside.
In a large bowl, cream the softened butter and granulated sugar together.
Beat into the creamed sugar the vanilla extract, vinegar, and red food colouring. Next add the two eggs and beat slowly. Try not to overmix.
Line an 8x8 baking dish with parchment paper and spoon 2/3 of the batter into the dish.
Spoon the cream cheese mixture on top of the red velvet mixture then add the rest of the red velvet batter to the top of the brownie mixture.
Take a knife and swirl the cream cheese filling and the top layer of the red velvet brownie batter together.
Bake for 55 minutes to 1 hour or until a knife inserted comes out clean.
Let sit in the baking dish until partly cool then remove and continue to let the brownies cool on a cooling rack. About 2 hours until they are fully set to enjoy!
