Red Velvet Cookies with Cream Cheese Frosting

Red velvet cookies are easy to make and delicious to eat.  Iced with a smooth cream cheese frosting, these cookies are indulgent and amazingly tasty!

Ingredients
  

Red Velvet Cookie Batter

  • 1/2 butter unsalted and softened
  • 1/4 c. granulated sugar
  • 1/3 brown sugar
  • 1 medium egg
  • 2 tsp. red food colouring
  • 1 tsp. vanilla extract
  • 1 1/4 c. all-purpose flour
  • 2 tbsp. cocoa powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. baking powder
  • 1/4 tsp. salt

Cream Cheese Frosting

  • 1/2 c. heavy cream or 1 c. of whipped cream
  • 8 oz. cream cheese
  • 1 tsp. vanilla extract
  • 1 c. icing sugar

Cookie Mix Instructions

  • In a large bowl beat the softened butter and the granulated and brown sugar together. Beat it for about 2 minutes.
  • Next add the medium egg, vanilla extract, and red food colouring. Beat until it is light and fluffy and the whole wet mixture has an even red colour. Make sure to scrape the sides as needed.
  • In a separate bowl, whisk the all-purpose flour, baking soda, baking powder, cocoa powder, and salt together, ensuring that there are no lumps in the dry mixture.
  • Slowly pour the dry ingredients into the wet ingredients beating the mixture as you pour.
  • Once the dry ingredients are incorporated into the wet either chill in the refrigerator for 4 hours or bake straight away.
  • Preheat the oven to 375℉/190℃/Gas Mark 5.
  • Bake for 11-13 minutes. They will be soft so leave them in the pan to harden for a few minutes before transferring to the a cooling rack.

Cream Cheese Frosting

  • In a separate bowl, either place your whipped cream or whip the heavy cream. Whip the heavy cream for about 4-5 minutes. Add the cream cheese and vanilla extract and continue to beat.
  • Once fully incorporated, add the icing sugar and beat into the cream cheese frosting.
  • Keep in the fridge until needed to ice your cookies!
