This easy salsa chicken is made with tender diced chicken simmered in a flavor fulblend of salsa and Dijon mustard. It’s a quick, one-pan recipe that’s perfect for busy weeknights, meal prep, or a simple healthy dinner packed with bold flavor.

Ingredients
  

  • 2 diced chicken breasts
  • 1/2 c. salsa
  • 2 tbsp. Dijon mustard
  • Pepper and salt to taste

Instructions
 

  • Fry the diced chicken breasts on medium heat until the edges start to cook. Season with salt and pepper.
  • Pour the salsa and Dijon mustard into the pan and coat the chicken evenly.
  • Cover with a lid and let fry for 25 minutes or until fully cooked through.
  • Remove from the heat and serve with your favourite side dish or use for meal prepping.
