Slow Cooker Roast Beef
This slow cooker roast beef recipe is a great meal when you just don’t have time to cook but want something nice. Or if you are trying to impress someone… like me with my mother-in-law. This dish is perfect for busy days and just takes the burden of cooking dinner off of you. And it's super delicious!

- 2 lb. chuck roast
- 8 carrots peeled and chopped
- 8 large potatoes peeled and chopped
- 1 medium onion finely chopped
- Salt to taste
- Black pepper to taste
Pour a tiny amount of water into the bottom of the slow cooker barely enough to completely cover the bottom of it.
Place your raw cut of beef into the slow cooker and season with salt and pepper on every side of the beef. If slow roasting vegetables such as carrots or potatoes, place them on top of the beef and around it, but make sure not to overfill the slow cooker or there will be issues with cooking properly.
Depending on length of time that you want the roast to slow cook for, use that level of heat. Low heat 7-8 hours and high heat 3-4 hours.
Once cooked, remove the vegetable from the slow cooker and place into a separate dish. Remove the roast beef and allow to rest for about five minutes before slicing to serve.
