Strawberry Muffin Recipe

This strawberry muffin recipe is a delicious, soft muffin filled with juicy strawberries in every bite!  With a soft, tender crumb, these muffins are sure to please everybody!

Ingredients
  

  • 3 c. all-purpose/plain flour
  • 1 c. sugar granulated
  • 3 tsp. baking powder
  • 1/2 tsp. salt
  • 2 large eggs
  • 3/4 c. whole milk
  • 1/2 butter softened
  • 1 1/2 tsp. vanilla extract
  • 2 c. strawberries diced

Instructions
 

  • Preheat the oven to 425℉/220℃/Gas Mark 7.
  • In a medium bowl, whisk the all-purpose flour, granulated sugar, baking powder, and salt. Set aside.
  • In a large bowl, beat the whole milk, softened butter, eggs, and vanilla extract together.
  • Slowly pour in the dry ingredients into the wet ingredients and beat on a low speed until fully incorporated. The muffin batter will be thick.
  • Take the diced strawberries and pour into the batter and fold them in.
  • Scoop the muffin batter into lined muffin tins filling them to the top.
  • Bake in the oven at 425℉/220℃/Gas Mark 7 for 5 minutes then decrease the heat with the muffins in the oven to 350℉/176℃/Gas Mark 4 and continue to bake for another 18-19 minutes.
  • Remove from the oven and let cool in the muffin tray for 10 minutes then place onto a cooling rack until cool.
