Strawberry Muffin Recipe

- 3 c. all-purpose/plain flour
- 1 c. sugar granulated
- 3 tsp. baking powder
- 1/2 tsp. salt
- 2 large eggs
- 3/4 c. whole milk
- 1/2 butter softened
- 1 1/2 tsp. vanilla extract
- 2 c. strawberries diced
Preheat the oven to 425℉/220℃/Gas Mark 7.
In a medium bowl, whisk the all-purpose flour, granulated sugar, baking powder, and salt. Set aside.
In a large bowl, beat the whole milk, softened butter, eggs, and vanilla extract together.
Slowly pour in the dry ingredients into the wet ingredients and beat on a low speed until fully incorporated. The muffin batter will be thick.
Take the diced strawberries and pour into the batter and fold them in.
Scoop the muffin batter into lined muffin tins filling them to the top.
Bake in the oven at 425℉/220℃/Gas Mark 7 for 5 minutes then decrease the heat with the muffins in the oven to 350℉/176℃/Gas Mark 4 and continue to bake for another 18-19 minutes.
Remove from the oven and let cool in the muffin tray for 10 minutes then place onto a cooling rack until cool.
