While the crust is chilling, prepare the cheesecake filling. In a large mixing bowl, beat the softened cream cheese on medium speed until completely smooth and free of lumps. Ingredients
  

Chocolate Graham Cracker Base

  • 1 1/2 c. chocolate graham crumbs
  • 1/4 c. unsalted butter

Oreo Cheesecake Filling

  • 16 oz. full-fat cream cheese
  • 1 tub whipped topping
  • 1 tsp. vanilla extract
  • 1 c. icing sugar
  • 16 Oreo cookies cut

For Topping

  • 8-10 Oreo cookies
  • Whipped cream optional

Instructions
 

  • Melt the unsalted butter and mix in well with the chocolate graham cracker crumbs until they are completely moist. Press the moistened crumbs into a 7" springform pan and place into the fridge to cool and set. About 2 hours.
  • In a large bowl on medium speed, beat the cream cheese until smooth. Add the vanilla extract and icing sugar to the cream cheese. Continue beating at medium speed until fully mixed.
  • Add the whipped topping to the bowl, and beat on medium speed until the cream cheese mixture is smooth. Add the chopped Oreo cookies to the bowl and mix them in.
  • Spoon the thick filling on top of the cooled chocolate graham cracker base evenly. If using whipped cream for topping, pipe it around the sides of the springform pan, place the Oreos on top of the cheesecake, and place back into the refrigerator to chill for another 4-5 hours or until ready to serve.
  • Serve and enjoy!
