  • 3 c. rotini pasta or fusilli penne, or farfalle
  • 1 c. cherry tomatoes halved
  • 1 red bell pepper sliced thinly
  • 1 English cucumber sliced and halved
  • 1/2 c. green olives or black olives sliced
  • 1/2 c. green onion diced for garnishing
  • 3/4 c. Parmesan cheese freshly grated or any other hard cheese, grated
  • 1 c. Italian dressing
  • Fresh basil leaves optional

Instructions
 

  • Cook the pasta according to the pasta bag instructions or until al dente. Remove from heat, strain, and rinse with cold water. Coat pasta in 1/2 c. Italian dressing: keep in the fridge until needed.
