Easy Egg Muffins
These egg muffins are fluffy baked mini omelets filled with eggs, cheese, vegetables, and your favorite add-ins. A quick high-protein breakfast recipe perfect for meal prep.

- 8 large eggs
- 4 egg whites
- 1 yellow orange, or red bell pepper, diced
- 1 c. baby spinach finely chopped
- 1 c. cherry tomatoes chopped
- 2/3 c. feta cheese
- 1 tbsp. parsley
- 1 1/2 tsp. salt
- 1 tsp. black pepper
Preheat the oven to 350℉/175℃/Gas Mark 4.
Grease a 12-cup muffin tin. In a medium bowl, whisk the eggs, egg whites, parsley, salt, and pepper together.
Chop up the baby spinach, bell pepper, and cherry tomatoes and place into the bottom of each of the muffin tins. Pour the scrambled egg mixture into each of the muffin tins and top each mixture with the feta cheese.
Bake for 24-28 minutes. Remove from the oven and let cool for 5 minutes in the muffin tins, then, using a knife to help release each egg muffin, remove them and let the egg muffins continue to cool on a cooling rack.
