High Protein Egg Muffins Recipe

How to Make Egg Muffins

Start by preheating your oven to 350°F (175°C) so it’s ready once the egg mixture is prepared.  Lightly grease a 12-cup muffin tin to help prevent sticking and make removing the muffins easier after baking.  In a medium bowl, whisk together the eggs, egg whites, fresh parsley, salt, and pepper until the mixture is fully combined and slightly frothy.  This creates the fluffy, protein-packed base for these easy homemade egg muffins.

Next, prepare your vegetables by finely chopping the baby spinach, bell pepper, and cherry tomatoes. Evenly divide the vegetables between each muffin cup, creating colorful layers of fresh flavor in every bite. Slowly pour the egg mixture over the vegetables, filling each muffin cup evenly.  Top each one with crumbled feta cheese for a creamy, slightly salty finish that pairs perfectly with the fresh vegetables.  These healthy breakfast egg muffins are incredibly customizable and perfect for using up extra vegetables you may already have in the fridge.

Place the muffin tin into the oven and bake for 24–28 minutes, or until the egg muffins are fully set and lightly golden around the edges.  The centers should no longer jiggle when gently shaken.  Once baked, remove the muffin tin from the oven and allow the muffins to cool for about 5 minutes in the pan.  Using a knife to gently loosen the edges, carefully remove each muffin and transfer them to a cooling rack to continue cooling.

Ingredients
  

  • 8 large eggs
  • 4 egg whites
  • 1 yellow orange, or red bell pepper, diced
  • 1 c. baby spinach finely chopped
  • 1 c. cherry tomatoes chopped
  • 2/3 c. feta cheese
  • 1 tbsp. parsley
  • 1 1/2 tsp. salt
  • 1 tsp. black pepper

Instructions
 

  • Preheat the oven to 350℉/175℃/Gas Mark 4.
  • Grease a 12-cup muffin tin. In a medium bowl, whisk the eggs, egg whites, parsley, salt, and pepper together.
  • Chop up the baby spinach, bell pepper, and cherry tomatoes and place into the bottom of each of the muffin tins. Pour the scrambled egg mixture into each of the muffin tins and top each mixture with the feta cheese.
  • Bake for 24-28 minutes. Remove from the oven and let cool for 5 minutes in the muffin tins, then, using a knife to help release each egg muffin, remove them and let the egg muffins continue to cool on a cooling rack.
  • Enjoy now or meal prep for later!
