- 1 store-bought or homemade puff pastry crust
Peach Filling
- 2 large peaches pitted and sliced into about 1/4 to 1/2 inch slices
- 3 tbsp. granulated sugar
- 2 tbsp. cornstarch
- 1/2 tsp. vanilla extract
Egg Wash
- 1 egg
- 1 tbsp. whole milk
- Coarse sugar for sprinkling optional
Preheat the oven to 425℉/220℃/Gas Mark 7.
Toss the sliced large peaches, granulated sugar, cornstarch, and vanilla extract in a medium bowl.
To make your egg wash, in a small bowl, whisk the egg and whole milk together.
Roll out the puff pastry dough onto a lined baking sheet. Spoon the peach filling into the centre of the pastry, leaving 2-3 inches around the edges for folding.
Gently fold the pastry sides over the peach filling, overlapping as needed and gently pressing down. Using a pastry brush, brush the egg wash onto the sides of the pastry all the way around the folded edges. Sprinkle with coarse sugar if desired.
Bake for 15-20 minutes or until the crust is golden brown and the peach filling is bubbling.
Remove from the oven and let cool for 10 minutes before serving. Serve with either whipped cream or ice cream!
